BREAD COCONUT CAKE / BREAD COCONUT POLA

Pola is a very popular Malabar snack especially prepared during Ramadan for Iftar. Here am going to share a special pola recipe with bread and coconut as the main ingredients. This sweet snack is very simple to make and delicious in each bite. It tastes very close to coconut cake. INGREDIENTS

Bread slices                 -8 pieces
Milk                              -3 tbsp
Egg                               -2 nos
Grated coconut            -half cup
Cardamom powder      - a pinch
Salt                               - a pinch
Ghee
Sugar   
Cashews, badam, for decoration

PREPARATION 

  • Heat a pan and add little ghee.
  •  Then add grated coconut with 1 tbsp sugar and a pinch cardamom powder. Saute for few minutes in a low flame.
  • Keep it aside.
  • Remove the sides of bread.
  • Beat egg, 3 tbsp of sugar, and milk very well . Add a pinch salt too.
  • Heat the pan again and spread little ghee. Keep the flame very low.
  • Dip each bread in the egg batter and line in the frying pan.
  • Keep the bread pieces closely to each other and make a round shape. Fill all gaps with bread pieces and then spread the coconut mixture evenly.
  • After that, close this mixture with the bread slices again by dipping in egg batter.  Pour the excess egg batter all over the bread.
  • Decorate with cashews and Badams.
  • Cook in a low flame.
  • Flip after 5 minutes and cook the other side.
  • When done keep it for few minutes and then cut into desired shapes.
