COCONUT PUDDING RECIPE

Tender coconut pudding is a very rich, unique and yummy pudding with tender coconut (ilaneer). As Kerala, the gods own country is the land of coconuts... tender coconut is available in plenty and the pudding with coconut is common and popular in most of the parties. The coconut water (ilaneer vellam) is the healthy drink of kerala which is very nutritious and delicious with a yummy flavor.  Though it is yummy it is very ease in preparation with only handy ingredients. Here am going to share the recipe of tender coconut water pudding which is really a quick and nostalgic recipe with all the goodness of coconut. INGREDIENTS

Tender coconut water/ normal coconut water  -  3 cups
China grass              - 5 gm
Tender coconut flesh- 1 cup, finely chopped
Sugar - 4 tbsp (add according to the sweetness of coconut water)


PREPARATION


  • Separate the tender coconut flesh and water. Set aside in two bowls.
  • Add sugar in coconut water and mix well.
  • Chop the coconut flesh in desired shapes and set aside.
  • Soak the china grass in cold water for few minutes and then cook over a slow flame until it dissolves to a clear liquid.
  • Meanwhile heat up the coconut water slightly and add the dissolved china grass to it. Mix well. Switch off the flame.
  • Strain it using a strainer and pour into a pudding bowl.
  • Allow it to cool for 5 minutes and then decorate with the chopped coconut flesh on the top. 
  • Chill for few hours until it sets.
  • Serve chill.
