INGREDIENTS

All purpose flour / maida     - 1.5 cup
Baking powder                     - 1 tsp
Baking soda                         - half a tsp
Cornflour    - 1 tsp (optional only, gives a structure to cake )
Salt                                      - a pinch
Vegetable oil                       - half a cup
Orange juice                      - half a cup, fresh, sweet
Orange zest                       - half a tsp,( optional)
Vanilla or orange essence  - half a tsp
Thick less sour curd          - half a cup
Powdered sugar               - half a cup + 3 tbsp

  • Preheat the oven to 180 degree C. 
  • Grease a cake pan and dust it with flour. Set aside ready.( I took a wide cake mold to make a thin cake. You can take 8-inch cake pan for a normal thick cake.)
  • Sieve together flour, baking powder, baking soda, cornflour, and salt. Set them aside.
  • Now add the less sour curd in a bowl and whisk it well.
  • To this, add powdered sugar (add sugar in a blender and powder it) and again whisk well.
  • Add oil and whisk it,  add orange juice and whisk it.
  • Now add orange zest, vanilla essence and whisk well.
  • Now add the sifted flour little by little and fold well gently. Do not whisk after adding the flour. Fold them without any lumps.
  • Now pour this prepared batter into the cake pan and bake for 30 minutes at 180 degree C in a preheated oven.
  • Insert a tooth pick and if it comes out clean, the cake is done.
  • Let it cool and then slice. For a nice slice, refrigerate the cake for few minutes. Serve along with a nice cup of tea. Keep refrigerated the remaining cake.
NOTES: 
  • If you are using fresh orange juice, just make it only before adding to the batter. Else it will taste bitter (keeping orange juice for long).
  • Some may not like the taste of orange zest. So for those..can skip it.
  • Keep a butter paper under the cake tray while baking in the oven (as in the image). This will give a nice texture to the bottom of the cake.

All time my favorite dosa is Masala dosa though it is time consuming. You know, the popularity of masala is beyond expectations. The main difference i had found in Masala dosa and Mysore masala dosa is the red chutney spread. Here the dosa is layered with red chutney, butter and then the potato filling. As it is originated from Mysore, it is named as Mysore masala dosa. For all dosa lovers, you must try this variation for sure. In my opinion, we can make more varieties in dosa. Each one will taste different but delicious. All you need is a perfect dosa batter. So keep on trying something new and creative dosa recipes by following a perfect dosa batter.

INGREDIENTS

For dosa batter

Idli rice / Parboiled rice / Pachari - 2 cups
Urad dal                                          - 1 cup
Chana dal / kadala parippu / bengal gram - 4 tbsp
Fenugreek seeds                                        - 1 tbsp
Salt as needed
Ghee to sprinkle over dosa

for spicy red chutney (to spread over dosa)

Red chilies, dried       - 4 nos
Shallots                      - 6 nos
Chana dal                  - 1 tbsp 
Garlic                        - 2 cloves, big
Coconut grated    - half a cup (optional. but tastes yum)
Oil                              - 1 tbsp
Salt
     

For potato filling

Potato                          - 3 nos, unpeeled
Carrot finely chopped  - 3 tbsp, optional
Onion                           - 1, big, thinly sliced
Green chili                   - 2 , chopped finely
Turmeric                       - quarter tsp
Mustard seeds              - 1 tsp
Urad dal                       - half tsp
Asafoetida/hing            - a pinch
Oil                                - 2 tbsp
Curry leaves (optional)
Salt

  • Wash well and then soak idli rice / parboiled rice, urad dal, fenugreek seeds, bengal gram in enough water for 5 hours.
  • Grind them until smooth texture after 5 hours by adding water  little by little required(do not add more water at a time). 
  • Transfer it to a bowl, add salt and mix well.  Leave it overnight for fermentation. (required minimum 8 hours in summer and it differs according to the climate).
  • Next day take the batter and mix well. Add water (may be half cup) required for making a batter of thick pouring consistency.

  • Wash and cut the potatoes into half and pressure for 2 whistles with required water and salt. I just boiled it in a pot. Once it is done and cools, peel its skin and mash it (not to a paste). Set aside.
  • Heat oil in a pan and splutter mustard seeds. To this,  add bengal gram, urad dal and saute for a while. Now add, thinly sliced onion, chopped carrot and green chilies (i skip this). Saute until onion turns soft. 
  • Add salt and now add the mashed potato along with hing and turmeric powder. Combine very well.
  • So our potato masala is ready.

  • Heat oil in a pan and roast chana dal, red chilies over a medium flame. To this, add shallots and garlic. Fry for few minutes. Transfer it to a bowl and once cooled coarse grind it.
  • Then add, coconut grated and grind it to a smooth yet spreadable consistency paste. (i made a condiment consistency for a twist)
  • You can add more dried red chilies for more hotness. 
  • You can also skip adding grated coconut, but i prefer adding grated coconut as it adds more taste.

  • Heat the tawa for making dosa. I used nonstick dosa pan instead of frying pan. No need of applying ghee or oil for making dosa. Heat the pan and once hot, reduce the flame to medium low. (Never make dosa when the pan is very hot. You can spread the dosa when the pan is hot. And if the pan is hot,  reduce the flame, drizzle some cold water and then make dosas.)
  • Once the flame is medium low, pour a ladle full of batter and then quickly spread it evenly in a circular motion from center to outside with the back of that ladle.
  • Once the dosa is half cooked, spread a tablespoon of red chutney over the dosa.
  • Now add butter or sprinkle ghee over it, if required.
  • Add 3 tbsp of potato masala and fold the dosa or roll the dosa.
  • No need of flipping the prepared dosa.
  • Serve hot along with Sambar and coconut chutney

HOMEMADE CHICKEN BURGER PATTIES - BURGER PATTY RECIPE

Here is my homemade recipe for Chicken burger patties prepared with ground chicken meat and spices . Chicken burgers are so lovely and filling meal that can give us a joyful treat in each bites. It is not practical to have this junk food on a regular basis, though it is delicious. But, it is possible to make chicken patties or burger patty at home with handy ingredients in our pantry. This juicy chicken burgers sandwiched between burger bun is a must try recipe for a quick dinner meal. I bet, you will never go for a store bought burger patty once u try this recipe. As chicken is a staple food, i prefer chicken burger patty recipe than a beef burger patty recipe or fish burger / fish sandwich patty recipe. I love making this for dinner and sometimes as a lunch sandwich. Ingredients for this healthy patty recipe are quite simple. Moreover it is very healthy when compared to store bought frozen burger patties.  This homemade burger recipe with minced chicken is a perfect no fail recipe with step by step pictures of making. INGREDIENTS

Boneless chicken breast           - 2 medium sized pieces
Soy sauce                                  - 1 tbsp           
Pepper powder                           - 1 tsp
Garlic paste                                - 1 tbsp
Oregano                                      - half tsp
Salt                                              - half tsp, always add less salt
Oil                                                - 1 tsp + oil for deep frying
Cornflour                                      - 3 tbsp
Breadcrumbs                                 -half a cup


To Assemble

Burger buns                                  - 4 nos
Mayonnaise                                   - 4 tsp
Cheese slice                                   - 4
Tomato ketchup                              - 2 tsp
Tomato                                            - few slices
Lettuce Shredded as required

PREPARATION




























  •  Cut the chicken breasts into small pieces. Now we have to mince this chicken chunks. Pulse it in the blender for few minutes. Do not blend more.
  • To this minced chicken, add  soy sauce, pepper powder, oregano, salt, garlic paste and give a fine mix. It will be sticky, but do not worry.
  • To this, add the cornflour and again combine with a spoon.
  • Now add, oil to the mixture and make a medium sized balls. You can grease your palms before making balls.
  • Now take a greased round shape (a small lemon sized) and press the burger patty inside it  and then shape it round.
  • Take it out and dip it in the bread crumbs and then flatten within your palms lightly. You can make the burger patty thin or thick. I prefer thin patty. Chill for 15 minutes. 
  • Now take a frying pan and heat the oil for deep frying. Once hot, make the flame to medium low, add the patties, flip in between and fry both sides( If you fry in high flame, the sides will get burnt leaving the middle part uncooked ). Drain it and set aside.
ASSEMBLING BURGER
  • Take your burger bun. Toast them lightly in a pan or oven for a minute. 
  • Spread 1 tsp of mayonnaise on one side. Place the tomato slice over it, top it with homemade fried chicken patties, spread some tomato ketchup, place cheese slice and top it with lettuce. Cover it with the other bun slice. Serve and enjoy.
