LEFTOVER RICE RECIPE - AKKI ROTI
This time let me share a popular Karnataka dish which is almost very similar to Malabar vibhavam ila ada/ ilayilparithi. Anyway, I was searching for some leftover rice recipes these days. And here I got a simple snack or roti recipe which is very soft. Kids always need something colorful to eat. This recipe for roti with the leftover recipe will be kids favorite for sure. I added carrot slices, coriander leaves, onion to make this roti more delicious. My mom used to cook this recipe whenever she hates preparing dosa for breakfast. I know, like me most of us hate making breakfast. Try this recipe with leftover rice. So here is the recipe showing how to make Akki roti/leftover cooked rice recipe/ roti recipe/ breakfast recipes healthy/ less oil recipes.INGREDIENTS
Cooked rice - 1 cup
Scraped coconut - quarter a cup
Cumin seeds - half tsp
Green chilies - 1 or 2, as per your preference to heat
Rice flour - 1 cup + few teaspoons if required
Carrot finely grated - quarter a cup
Onion - 1, finely chopped
Coriander leaves - quarter a cup, chopped
Salt
Oil for greasing the sheets
PREPARATION
- Grind together cooked rice (leftover cooked rice), scraped coconut, green chili, cumin seeds in a blender and make a puree (do not add water). ( sorry friends, in the above quick video cumin seeds is not mentioned by mistake.)
- Transfer this mixture to a bowl. Add salt and mix well with a spoon.
- Now add rice powder and knead well using your hand. If it is more sticky, then add more rice powder.
- To this, add grated carrot, chopped coriander leaves, and chopped onion. Again knead well to form a spreadable dough.
- When done, take a plastic sheet or banana leaf. Grease it with oil. Take a small dough out of this prepared dough. Place it on the greased sheet or greased banana leaf.
- Now slightly flatten the dough in a circular direction. Check the video.
- When done, heat a pan or tawa. Place it over the prepared pan. Cook until both sides turn golden.
- Serve hot along with chicken curry. My favorite.
