INGREDIENTS
Unsalted butter - 75 g
Dark chocolate - 75 g (or can use dairy milk chocolate or any)
Powdered sugar - half a cup
Banana - 1, big, mashed, overripe, Chiquita or robusta
Eggs - 2 nos, at room temperature
All purpose flour/maida - 1 cup
Cocoa powder - 1 tbsp
Baking powder - 1 tsp
Baking soda - half tsp
Salt - quarter tsp
Vanilla essence - 1 tsp
Almond flakes - to garnish
PREPARATION
- Preheat oven to 180 degree C.
- Grease the baking pan and line it with butter paper. Set aside.
- Sift together All purpose flour (maida), cocoa powder, baking powder, baking soda, and salt. Set aside in a bowl.
- Heat a nonstick pan over a low flame. Slide unsalted butter. Once melted, add the powdered sugar. Mix well to combine. Once the butter and sugar are well combined (will take 5 to 8 minutes over a low flame). Then remove from the flame. Now add the cooking chocolate and combine well until the chocolate completely melts.
- In another bowl add mashed banana, egg and vanilla essence. Whisk well with a hand whisker (or can use wire whisker). To this, add the chocolate mixture. Again whisk well to combine.
- Now add the flour mixture little by little and fold it gently (do not add the flour mixture at a time, for best result fold it in three batches.)
- Pour this batter into the prepared pan.
- Sprinkle almond flakes on the top.
- Bake in the preheated oven for about 40 minutes or until the cake is done. (insert a toothpick and if it comes out clean, then the cake is done.)
- Once done, remove from oven and let it cool completely at room temperature.
- Then slice and serve.
