SIMPLE SNACKS RECIPES - BREAD BANANA SNACK

Bread snacks or banana snacks especially plantain recipes are always kids favourite. These kids recipes are very easy to make and at the same time it is scrumptious too. I love to experiment in snacks recipes. Whenever my kids asks fir any evening snacks, I just for some creative snacks recipes using bread and banana. Though Brown bread is my favirite, all my snacks recipes calls for white bread or milk bread only. Here am sharing a special inviting snack recipe , a sweet yummy snack using bread and banana. The recipe is very simple. Just make french toast or bread toast and set aside. Then cook the sliced banana or ripe plantain in caramel sauce until the banana is done. Then spread the french toast in a serving tray and then top it with caramel banana and its sauce. Serve immediately. Yummy. So hope you all liked this simple snack recipe with Bread and banana.

INGREDIENTS


For French toast
Bread  - 8 slices
Egg   - 1
Sugar - 2 tbsp
Milk   - quarter a cup
Oil or ghee

For Caramel banana 
Sugar    - half a cup
Water    - quarter a cup
Butter  - 2 tsp, at room temperature 
Milk   - half a cup 
Ripe plantain   - 1, sliced 

PREPARATION

  • Let's make french toast first. For that, as usual whisk egg, milk and sugar in a bowl. Instead of adding milk you can add more eggs.
  • Heat a pan with ghee or oil. Dip each bread slices in this egg mixture and toast it until both sides are done.
  • When done, transfer it to a plate and set aside.
  • Now make the caramel banana. For that, make the caramel syrup by heating sugar and water.
  • Once the sugar starts caramelizing, reduce the flame to medium low and add butter . You can add melted butter but it must not be too hot. Combine well and then add milk at room Temperature. Combine again. So the sauce is ready. To this add the sliced plantain and cook it until the plantain is done. 
  • Now lets arrange tbis in a serving plate. 
  • Arrange the french toast in the serving plate. Top it with caramel banana along with the sauce. Serve immediately. 
  • You can also refrigerate the french toast and caramel banana separately and then combine them only while serving. 
  • Do try this snack recipe with banana and bread.

I love to make variety pudding recipes for my guests as pudding recipes are very less mess recipes for me. This eggless chocolate cake pudding is an outstanding pudding recipe with eggless chocolate cake as the base and topping with homemade chocolate sauce. The eggless chocolate cake is very easy to make cake recipe that too without oven. This no oven no egg cake recipe is really superb moist and the chocolate sauce which I used for topping this cake pudding absolutely creamy and yummy.

INGREDIENTS

For Chocolate cake (1 cup = 250 ml)
All purpose flour/ maida - 3/4 cup
Cocoa powder - 3 tbsp
Coffee powder - half tsp
Baking powder -half tsp
Baking soda - quarter tsp
Salt - quarter tsp
Oil - quarter a cup
Powdered sugar - half a cup
Lemon juice -half tsp
Curd - 2 tbsp
Water - half a cup

For Chocolate Sauce

All purpose flour/ maida - half tsp
Coffee powder - half tsp
Cornflour - half tsp
Cocoa powder- 2 tbsp
Water - 2 tbsp
Milk - half a cup
Sugar - quarter a cup or more

PREPARATION

Here is the video



  • Set aside the cake tin or steel bowl ready. Here I took two steel bowls. Grease the bowls with oil and dust it with flour and tap out the excess flour.
  • Now let's prepare the cake batter. For that, take a large bowl and mix together oil and powdered sugar. Mix well.
  • To this add curd and lemon juice. Again mix well.
  • Now keep a siever over the bowl and add flour, cocoa powder, baking powder, baking soda, salt, coffee powder. 
  • Sieve well and combine it with the wet ingredients. Fold very well.
  • Then add water little by little and mix very well. So the batter is ready.
  • Now pour the batter to the prepared bowls. Tap the bowls. Cover it with aluminium foil.
  • Here we are going to steam it in a non-stick pan instead of using oven or a steamer. So heat a non stick pan  with some water. Keep a lid and once the water boils, keep the steel bowls with batter over it. 
  • Steam cook it for 30 to 35 minutes with lid closed. Once the tooth pick inserted comes out clean, then the cake will be ready. 
  • Meanwhile make the chocolate sauce.
  • Add all those ingredients given under for making sauce in a pan except butter. Mix very well without any lumps. Few lumps are ok.
  • Then heat it over a very low flame until it thickens slightly. You must stir this mixture Continuosly. Once it thicken slightly, add butter and combine well. Remove from flame. Pass it through a strainer and transfer it to a bowl. Set this aside.
  • After 30 minutes or when the cake is cooked, take out the cake tin and pass a knife along it's side. You can wait for the cake to cool down. But I didnt. Invert it into a plate.
  • Cover the cake with this prepared chocolate sauce . 
  • Decorate with a teaspoon of condensed milk and can serve hot or cool.

Like bread pudding ( you can check my video for simple bread pudding recipes), bread pakoda, bread gulab Jamun, bread kunafa, bread roll, bread chicken roll, bread sandwich, bread dosa, bread upma, bread toast, bread sandwich cake ( pls check my video for the same), etc. Let's make a simple and very quick bread snack today. This is a sweet snack and is very easy to make with very handy ingredients. The only ingredient which u require for making this Snack is bread. I have shared lots of innovative and creative recipes with Bread. Bread lasagna, bread chicken sandwich cake, bread banana roast, bread pudding in my own style, coleslaw sandwich using bread, bread chicken pakoda, etc. All these recipes are very tasty and I highly recommend to try those bread recipes. Kids love to have bread for their snack box and this snack is one among the same. You can refrigerate this snack for 2 to 3 days. So do make this snack for your kids and enjoy their cute smiley face.

INGREDIENTS

Bread - 10 nos or more 
Powdered cashews and pistachios - as required
Oil for frying  



For sugar syrup

Sugar  - half a cup
Water - 1 cup
Cardamom - 2 nos



PREPARATION

  • Using a heart shaped cookie cutter cut the bread into heart-shaped pieces. Discard the sides of the bread. You can cut into square pieces discarding the sides or any shapes of your choice.
  • Set aside ready the powdered cashew and pistachios. ( Here I dry roasted few cashews and few pista slices over a very low flame and then powdered it once cooled slightly)
  • Boil sugar, water and cardamom for 5 minutes. Just a sticky consistency is enough. Do not boil for more. 
  • Heat a pan with oil for deep frying and once hot, make the flame to medium-low. Fry the heart shaped bread pieces until both sides turn golden and crisp. Once done transfer the fried bread to a plate. 
  • Fry the rest of the bread pieces and set aside.
  • When done, add the fried bread to the slightly warm sugar syrup ( do not heat the syrup) and take out immediately. Do not dip for long which is very important. 
  • Once done, transfer it to another plate. Coat each bread ( which is immersed in syrup) in powdered nuts. Do it one by one. 
  • Serve hot or chilled.

KORMA RECIPE / MUTTON RECIPES - MALABAR MUTTON KURUMA

My family loves  Mutto recipes very much. Especially mutton pepper roast ( kurumulakitta aatirachi) . I used to prepare mutton pepper roast whenever I buy fresh mutton. While selecting mutton for preparing any mutton curry recipe or for any mutton roast recipe , try to select tender mutton for best result. Kerala style mutton recipes especially Malabar style mutton recipes are very popular for its taste and aroma. Mutton korma or mutton Kuruma is an Indian dish which can be prepared in different taste and texture. Indian style mutton korma is entirely different from the Malabar mutton Kuruma. In Malabar mutton Kuruma , the addition of thick coconut milk or coconut mixture makes this mutton dish really special. Here I used thick coconut milk for the outstanding taste. Malabar mutton korma or Kerala style mutton korma pairs best with hit porotta or ghee rice. You can also make Beef korma or beef Kuruma following the same recipe. And can aldo add more chili powder if you prefer Indian style mutton Kuruma recipe.

INGREDIENTS

Mutton / Lamb - 1 kg, cut into medium sized pieces
Onion     - 2 nos, sliced finely
Shallots - 15 nos, finely chopped
Raw spices - 2 cardamom, 2 cloves, a pinch of cinnamon powder, quarter tsp fennel seed
Green chilies - 6 nos, or can add more
Ginger garlic paste - 2 tbsp
Tomato   - 2 nos, sliced
Coriander powder   - 2 tsp, heaped
Chili powder - half tsp
Pepper powder - 1 tsp
Thick coconut milk - 2 cups
Coriander leaves - sliced
Salt
Coconut oil

For seasoning 

Shallots - 2 nos, finely chopped
Garlic  - 1, very finely chopped
Curry leaves
Coconut oil

PREPARATION

  • Clean the mutton very well and drain it. Set aside ready.
  • Heat the pressure cooker with some coconut oil . Once hot, add the sliced onion and then the chopped shallots. Add salt and then the raw spices. Saute for 2 minutes. 
  • Then add the green chilies and ginger garlic paste. Saute until the raw smell of ginger garlic paste disappears. 
  • When done, add the mutton pieces and combine very well. 
  • Then add the spice powders along with salt. Mix well and add 1 cup of water. 
  • Pressure cook it for 4 whistles. The cooking time depends upon the tenderness of mutton. 
  • Once the pressure releases, open the lid. Check whether the mutton is well cooked.
  • When the mutton is done, check for salt and add coriander leaves. 
  • Cook for another 2 minutes. When the gravy thickens slightly , make the flame to very low. 
  • Now add the thick coconut milk and mix well.
  • Be careful, do not let the curry to boil. Remove from flame before it starts to boil.
  • Finally season the curry with  all the ingredients given under for seasoning. Immediately pour it over it over the curry. Let it set aside covered for 5 minutes. 
  • Serve along with ghee rice of porotta ( paratha). Yummy.

TEA RECIPES - HOW TO MAKE PERFECT SOUTH INDIAN TEA

Tea is the popular and all time favorite hot beverage to most of us.  In South India, each households has their own way for making Tea. Some prefer strong tea for a refreshing feel while some prefer very light tea. I guess majority of my readers are Tea lovers like me. A nice cup of tea must warm you up on a heavy rainy day.  A tea can really change my mood. I love to have a strong tea or strong chai ( Chaya) in the morning and in the evening for a refreshing feel.  Like so, some people love to have milk in their tea while some loves having milk powder instead. 
I used to make tea using milk powder and sometimes with fresh milk. Now a days you can see various types of plain or flavored tea powder. I prefer using Red label tea powder for making a nice cup of milk tea or milk powder tea ( chai ). Like so , I prefer using Nido milk powder, Anchor milk powder , Rainbow​ milk powder for making my tea. If in Kerala, I prefer using Amulya milk powder also. This recipe for tea calls for milk powder or Fresh milk,  sugar and tea powder for making the perfect tea. Some prefer creamy and frothy tea while some need their tea to be very light . So in that case, add  fresh milk alone for a creamy tea and add some water along with fresh milk for a light tea. Enjoying a cup of hot strong tea is one of the simplest pleasures in our life, I think. Some will think that making a fine and perfect tea is the easiest work in the pantry. But it's not that easy to prepare a nice cup of tea without knowing the correct measurement and proportion for tea powder, milk powder and water or milk. It is very important that the ingredients should be in proportion. Here are some tips for making the perfect tea. Do try this tea recipes at home and enjoy . INGREDIENTS ( FOR MILK POWDER TEA)

For preparing 1 cup of tea ( 1 cup =150 ml)

Tea powder ( red label) -  1 tsp , heaped 
Milk powder   - 2 tbsp, levelled or flat 
Sugar - 1 tbsp, levelled or flat 
Water - 1.5 cups

PREPARATION

  • Heat water in a steel pot . 
  • Once it starts to boil, add tea powder. Boil it for a minute. 
  • Meanwhile, add milk powder and sugar in a large steel cup.
  • Once the tea powder is cooked very well, remove from flame. Pour the prepared tea to the large steel cup. 
  • Pour the hot strong tea to the steel cup from top. 
  • Repeat it a couple of times. This makes the tea creamy and frothy.
  • I don't like to strain my tea. 
  • Pour it to the serving cup. Serve hot. 

INGREDIENTS ( FOR MAKING FRESH MILK TEA)

For preparing 2 cups of Milk tea

INGREDIENTS

Milk  - 2.5 cups
Sugar - 2 tbsp
Tea powder - 2 tsp 
Water - 1 cup

PREPARATION


  • Boil milk and water in a sauce pan. 
  • Boil very well. Once it starts to boil, add sugar. Mix well.
  • Then add tea powder and let it cook for a minute.
  • Pour the prepared tea to a large steel cup from top.
  • Repeat it a couple of times. 
  • Pour it to the serving glass. Serve hot.

ELANJI - EASY KERALA SNACK RECIPE / SWEET COCONUT CREPES

KERALA SNACK RECIPE / KIDS SNACK BOX 

Snacks recipes, especially evening snacks recipes are favourite for most of us. Evening tea without any snacks are unimaginable. I prefer easy and delicious snacks to savour along with tea or coffee. Indian snacks, whether sweet snacks or  savory snacks are worth to try at home. But it must be simple to make with handy ingredients and it must be less mess recipes too. So here am with an easy and simple Kerala snack or Malabar snack - Elanji ( elanchi) which is also called as sweet love letter snack or Mayyathappam . The batter for making the  crepe is made by combining of grinding  All purpose flour ( maida ) along with egg, turmeric powder, salt and water. The consistency of the crepe batter must be thicker than Neer dosa batter and thinner than idli dosa batter. Moreover you have to make thin dosa or crepe out of this batter. The filling for this crepe is made of roasting scraped coconut along with sugar and cardamom. The filling must be very soft which tastes really outstanding. I used to prepare this snack daily to pack for my kids snack  box. But instead of All purpose flour, I prefer adding rice flour only....But you have to compromise slightly on its taste and softness. I bet, you all will crave for this yummy sweet snack for sure. Do try this snack recipe and let me know your feedback. INGREDIENTS

For the crepe 
All purpose flour / maida - 1 cup
Egg - 1 
Water - half a cup
Turmeric powder - half tsp
Salt to taste

For the filling
Scraped coconut - 1.5 cups
Sugar - quarter a cup or more
Cardamom - 3 nos
Cashews - as required, chopped, optional
Ghee - 1 tsp , for roasting cashews

PREPARATION

Pls watch the video given below 



  • First let's prepare the sweet filling. For that heat a pan with ghee. Roast the chopped cashews until golden over low flame. Add the scraped coconut along with sugar and cardamom. Combine well until sugar melts completely. The filling must be soft, so do not roast it for long as it will turn crispy. When done, set this aside.
  • Now let's make the batter. Grind together all those ingredients given under for making crepes until smooth. When done transfer it to a bowl. Do not add more water. The batter must not be too thick nor too thin. 
  • Now heat a non stick pan. Grease it slightly with ghee. Pour a ladle full of this batter. Spread it evenly using that ladle, same like we make ghee roast dosa. You have to make thin crepes.
  • Flip the dosa when one side is done. Cook for few seconds and again flip it. Transfer it to a plate. Place two teaspoon of the prepared coconut filling. Roll it tightly. Set it aside. 
  • Repeat the same with the remaining batter and filling. 
  • Serve hot along with a nice cup of tea. Or can pack this for kids lunch box. You can also use rice flour instead of All purpose flour.

Pudding recipes especially easy pudding recipes are favorite for everyone. I am not fond of sweets much but I love to make some desserts or puddings for my guests and often for my family as my kids crave for puddings especially chocolate flavored pudding recipes. Tea and coffee are the most refreshing drinks which can be served either hot or cool and it comes in a variety of flavors too. We can make a variety of sweets and desserts with coffee flavors. Here am going to share the recipe for coffee pudding which is really very easy to make. Yes, you can make coffee pudding in different ways like steamed coffee pudding, biscuit and coffee pudding, creamy coffee pudding, eggless coffee pudding, coffee custard pudding like so. In this pudding recipe, coffee powder along with cocoa powder is added which gives a special refreshing taste to the pudding.  When coffee is combined with milk and condensed milk it tastes amazing and pretty refreshing too. This yummy and easy pudding will give you such a refreshing treat for sure. Let's move on to the recipe showing how to make easy coffee pudding.

INGREDIENTS 

Coffee powder -  2 tsp
Cocoa powder   - 1 tsp optional
Milk     - 1.5 cups
Sweetened condensed milk  - half a tin
Sugar   - quarter a cup
Chinagrass  - 8 gms
Choco chips - for decoration only 

PREPARATION

  • Set aside the pudding bowl or mold ready before preparing the pudding mixture. For that grease the mold or bowl sparingly with butter. Stick the choco chips inside the bowl or mold. Keep it in the freezer until we prepare the pudding mixture.
  • LET'S MAKE THE PUDDING MIXTURE - Heat a pan with half a cup of water. Once it starts to boil, add coffee powder to it. Prepare a strong black coffee and set aside.
  • Then cook the chinagrass along with half a cup of water until melts to a clear liquid. 
  • Meanwhile, you can boil the milk in another pan. When it starts boiling, add cocoa mixture(mix cocoa powder with some water and make a paste ). Combine very well. Add condensed milk and sugar. Mix again. Add the prepared strong coffee and combine. 
  • Now add the melted china grass and cook well for a minute or two. Remove from flame.
  • Strain it and transfer this pudding mixture into another bowl. 
  • Allow it to cool slightly(just for 2 minutes).
  • Now take out the prepared mold and bowl from the freezer. Pour the pudding mixture gently. 
  • Keep it in the refrigerator for 4 to 5 hours or until it sets.
  • When done, invert the pudding to a plate.
  • Yummy creamy Coffee pudding is ready.

INSTANT EASY PUDDING - YUMMY SAGO PUDDING / DESSERT IN 5 MINUTES

Having desserts after the main course meal is something inevitable for most of us. It is very difficult to make some desserts or puddings every day. Sometimes we crave for something sweet but no time to make the same. Am not a sweet tooth guy but I do love to have some sweets after my main course meal and often after my dinner meal. This Instant pudding recipe or Instant dessert recipe is dedicated to all those who crave for sweets in a hurry. Yes, this pudding is incredibly comforting. Yup this pudding recipe is a great twist to usual pudding recipes. You don't need Chinagrass, gelatin, cornflour or custard powder for setting this pudding. The sweet coconut powder which is used for garnishing this dessert tastes amazingly delicious. Desserts don't get easier or quicker than this yummy sago pudding.. Am sure this will be a great refreshing treat for everyone.

INGREDIENTS

For cooking Sago 

Sago pearls / sabudhana   - half a cup
Ghee - half tsp
Sugar  - 1 tbsp
Salt  - quarter tsp
Hot water - 1.5 cups

For making sweet coconut powder 

Scraped coconut  - 1 cup
Sugar  - 2 tbsp or more

Other Ingredients

Thick coconut milk   - half a cup
Sweetened condensed milk - quarter a cup or more

PREPARATION

  • Let's prepare sweet coconut powder and sago ahead of time and store it in the refrigerator in an airtight container. So that you an make instant pudding within minutes. Its shelf life is more than a week when refrigerated.
  • Making of sweet coconut powder - Heat a pan and add the scraped coconut  and sugar. Dry roast it over a medium-low flame until slightly golden and crisp. It will take around 10 minutes. When done let it cool slightly and pulse it in the grinder. Store this sweet coconut powder in an airtight container and can use it for decorating any desserts or puddings .
  • Cooking sago - Heat a pan. Melt the ghee and roast the sago pearls for 2 minutes over medium-low flame. To this add 15 cups of hot water along with sugar and salt. Cook until sago is thoroughly cooked. When done transfer it to a bowl and store it in an airtight container for making instant pudding with it.
  • Let's prepare the Instant pudding - Mix together thick coconut milk and condensed milk. This mixture must be slightly thick. Mash the cooked sago along with some water or coconut milk. Add it to half a cup of boiling water. Combine it very well for 2 minutes without any lumps. Now take a pudding tray. Here a going to serve this pudding in glasses.   So add this cooked sago in each glasses until it covers half of the glasses. Level it well using a spoon. Top it with some coconut milk mixture. Garnish with sweet coconut powder.
  • So our Instant  pudding is ready to serve.

EASY BREAKFAST FOR KIDS/LABOTTA

We all know that Breakfast is one of the most important meals of the day. But due to lack of time, many of us skip having breakfast. Here am with an easy and yummy dish to serve for breakfast. This mildly sweet dish is also best to serve as an evening snack as well. Labotta -  the name itself is interesting right?  The dough of labotta is almost similar to the dough of poratta (Indian bread). Poratta is considered as one of the favorites and popular dish of Keralites. The dough for labotta is prepared using ripe plantain and All purpose flour or maida.  But for a healthy version, you can use wheat flour instead of maida.  I paired this easy and simple dish along with thick coconut milk and sugar mixture. It tastes amazingly good even with a nice cup of tea and so it doesn't require any side dish. The addition of ripe plantain makes this dish tastier and more special. Moreover, this breakfast recipe is kids friendly and they would surely love to pack this mildly sweet dish in their snack box. Do substitute maida or All purpose flour with wheat flour and make a simple and healthy breakfast for your family.

INGREDIENTS

All purpose flour / maida - 1.5 cups
Ripe plantain - 1, boiled and make a smooth paste along with sugar
Egg   - 1
Black Sesame seed   - 1 tsp
Salt  - half tsp

PREPARATION

  • Boil the plantain or banana very well and ground it along with sugar. Do not add more sugar. Set aside ready.
  • In a large bowl, combine together maida, sesame seeds, and salt. Cobine well with hand or spoon.
  • To this, add egg and combine again.
  • Then add the thick banana paste and mix very well. Apply some ghee on your palm and knead it to a smooth dough. 
  • When done keep, covered for half an hour.
  • Then heat a pan over medium flame. Grease the pan with ghee. Make medium sized balls out of this dough and flatten each ball using the pathiri presser or chapati presser. Add it to the hot pan. Cook until both sides are done. You must spread ghee over the labotta before flipping.
  • When done transfer it to a plate and set aside covered. 
  • Serve this along with thick coconut milk and condensed milk mixture or thick coconut milk and sugar mixture.
